Pancakes in itself, is just one food you can't get tired of. If you think you have had enough of pancakes, then you should try this pancake with a little twist. Plantain, as we all know is the much older brother of banana which happens to be the common ingredient usually added to pancakes. The use of plantain will not only make the pancake more bulky but it minerals and vitamins content can't be overemphasised. Let's get down to business.
INGREDIENTS
- 1 ripe plantain- peeled and mashed.
- flour- 250g/ 2 cups.
- Raw eggs- 2 large ones.
- butter- 50g/full tablespoon.
- baking powder- 3/4 teaspoon.
- powder/liquid milk- 50g/ 250ml.
- Sugar- 2- 3 tablespoons.
- salt- 1 teaspoon
For toppings
Honey, maple syrup or peanut butter.
PREPARATION BEFORE COOKING
Sieve the flour, baking powder, salt, sugar and the powdered milk( if you are using the powdered milk) together in a container.
In another bowl, lightly beat the eggs, melt the butter and mash the plantain with a fork. You can also blend it with a blender or food processor, But do not blend to complete smoothness. Mix the egg, melted butter and liquid milk(if you are using liquid milk instead) in a big bowl or jug. add dry ingredients to the liquid ingredients and lightly stir to make a batter.
Add the mashed plantain gradually into the batter and stir lightly. This batter will be thick, so you can add one cup of water if you want a lighter pancake.
COOKING
- place frying pan (preferably a non- stick skillet) on the stove ( or any kitchen heat source) and allow it to get medium hot.
- Cut in a small size butter ( vegetable oil is a substitute) into the pan and let it melt. pour in a large spoon size of batter in the pan and let it cook. You can spread the batter around the pan if you it thick. Turn over the pancake with a spatula or fork when you see bubbles on the pancake, dryness around the edges or when the downside turns brown.
- Remove from pan when both sides turns brown. Do the same to the rest.
- Breakfast is served
COOL TIPS AND TRICKS TO MAKE PERFECT PANCAKE,
1. Stack or place a newly cooked pancake on top of the previously cooked one to keep it hot and fresh.
2. Always remember to pour the dry ingredients inside the liquid ingredients and not the vice. Give will give you a smooth and well dissolved consistency of batter.
3. Other twist can include banana, chocolate, pepper, cheese and many more.
4. Always remember that the more fluid your batter is the lighter your pancakes. And the more thick your batter, the thicker your pancakes.
5. The simple way to remember the recipe is with this ratio; 2 parts flour: 2 parts liquid: 1 part egg: ½ part butter.
