LOW-KEY MIXED SAUCED SPAGHETTI
During my days in school, there were times when there won't be much cash to cook or eat exquisite meals. Then the thought of what to eat (see the what to eat dilemma) would strike. Initially, this question would be so hard to answer, considering my limited resources. But with time, I began my to strategize on how to be thrifty and still eat my balanced diet. Those strategies gave rise to the most delicious, budget friendly recipes you are about to explore.
FOR DAY ONE:PREP TIME: 2 mins. COOKING TIME: 30 minutes. SERVING: 4 people
INGREDIENTS
Dry spaghetti Pasta 500 grams ₦200
Habaneros pepper 5 pieces (or less) ₦50
Onions 1 small bulb ₦20
Egg 1 large size. ₦50
Tomato paste 2 full tablespoons/ one sachet ₦60
Curry and Thyme 1 teaspoons each ₦40
Seasoning cubes 2 cubes ₦20
Veg oil 3 tablespoons ₦50
Salt 1 levelled tablespoon.
PREPARATION
1ST METHOD
- Chop the onions and pepper and set aside.
- In a pot, boil the egg for 8 minutes
- Set a pot on fire and add the Veg. oil. When the oil hot, add onion, tomato paste, seasoning cube,curry and thyme and let it fry for 1 minutes (not forgetting to stir).
- After 1 minute, add the salt and stir. Add two and cups of water and let it boil.
- As it is boiling, Break in your spaghetti and stir. After stirring, let it cook for 10- 15 minutes.
- After 15 minutes, stir when you notice a drastic reduction in water. By this time, the water must have run dry and the spaghetti would have start burning. Remove from fire and serve hot with your boil egg.
2ND METHOD
- Boil spaghetti in a water twice the quantity of the spaghetti with salt, for 10 minutes. Drain the water after boiling and set it aside.
- In a pot, pour veg oil and set on fire, when the oil gets hot, Add all ingredients except the boiled spaghetti and fry for 2 minutes.
- After 2 minutes, pour in the spaghetti and stir together to incorporate the sauce into the spaghetti.
- Reduce the heat of the stove to low, cover the pan and let it cook for 30 seconds to 1 minute.
- After one minute, remove from fire and serve hot.
NOTE: There may be slight difference in cooking time due to disparities in stove heat, temperature, type of pot used and water. So, to avoid burning remember to check it regularly.
