DAY 5:DODO AND EGG SAUCE.

Fried Plantain or dodo as it is fondly called in Nigeria and egg sauce is nobody's enemy. there is this cousin of mine that will eat this all day. I asked one day why she just eat dodo and egg sauce almost everyday, and she would say that is the very best you can get for less money. I definitely agree with her because, the food is super delicious, easy to make and to crown it all, it is very budget friendly. Forget the serving size for this plate of deliciousness, I can finish this alone and in a short time. Okay,let's do this.

PREPTIME: 5 minutes. COOKTIME: 20 minutes. SERVING: 2 people.

INGREDIENTS

Ripe plantain 3 ₦200
Tomatoes and pepper 3 each (chopped) ₦100
Eggs 2 large sizes ₦100
Vegetable oil 6 tablespoons/ half cup. ₦50
Onions 1 small size (chopped). ₦20
seasoning cube 1 cube. ₦10
salt half teaspoon.

PREPARATION.

1. Peel the ripe plantain and slice to your desired shapes (I prefer the diagonal cuts). Take a pinch of salt from the half teaspoon and sprinkle it on the sliced plantain and fry until golden brown. pack the dodo from oil after frying.
2. In the same quantity of oil (half cup) pour in the chopped onions, tomatoes and peppers and fry. Add the seasoning cube and salt. Make sure to fry while for at least 3 minutes or more while stirring.
3. In a bowl, break and beat the eggs. After beating add it to the sauce on fire and wait for 10 second for it to form curds then stir together.
4. Cook for another 1 minute and remove from heat. Serve with tea, juice or ginger drink.
