DAY 4: THE PERFECT NIGERIAN YAM POTTAGE.
The infusion of pottage into lunch or dinner is not only a Nigerian thing. Different countries have what they call pottage with quite a number of differences. Nigerian pottage is kinda unique because it is healthy, rich and can be tweaked. Also, the addition of different vegetables just makes it a thing to die for. This recipes is very simple to make and budget friendly. There are two method to cook make this recipe, either method works best. Okay, let's get to the points.
INGREDIENTS. 3 SERVINGS. PREP TIME: 10 mins. COOK TIME: 25-30 mins
Yam 500 grams ₦200
Fresh scotch bonnets pepper (ata rodo)5 pieces (chopped). ₦50
Onions 1 medium bulb (chopped) ₦20
ginger and garlic powder 1 teaspoon each (optional).
Ground crayfish 2 tablespoons ₦50
dry fish 300 grams (optional).
Palm oil half cup. ₦100
Seasoning cubes 2 cubes. ₦20
Salt 1 teaspoon.
Sliced Pumpkin or Spinach leaves 1 handful. ₦50
BEFORE YOU COOK
- Peel the yam and cut into dice but slightly bigger. Wash and set aside.
- Clean the fish, cut into smaller portions and set aside.
- Wash the sliced pumpkin or spinach leaves, put inside a sieve to remove as much water as possible and set aside.
PREPARATION. 1ST METHOD
- Pour the palm oil into deep pot and set on fire to heat (medium heat works best) for 30 seconds
- Add the chopped onions, and fry for a while until its translucent, after which you add the chopped fresh pepper, stir and allow to fry for another 30 seconds.
- After 30 seconds, add the ginger and garlic powder (optional though), seasoning cubes, ground crayfish, dry fish and salt. Stir very well and add two full cups of water.
- By this time, add the yams, stir and make and allow to cook for 20 minutes.
- After 20 minutes, add the pumpkin or spinach leaves. Stir the yam with a wooden spatula. make sure to stir in a clockwise motion. Stir until there are less yam and the water inside is thickened. You can use the spatula to break the yams in the process.
- let it cook for another one minute and remove from heat. Your pottage is ready.
2ND METHOD
- Put the diced yam into a pot, add 2 cups of water and set on heat to cook.
- Immediately its on fire, add all ingredients except the pumpkin or spinach leaves. leave to cook for 20 minutes.
- After 20 minutes add the leaves and stir with a spatula in a clockwise motion. Stir until there is less yam and the liquid is thickened.
- Let it cook for 1 minute and remove from fire. You can serve your pottage with dodo or coleslaw.
