DELICIOUS, EASY TO COOK, BUDGET FRIENDLY RECIPE YOU CAN PREPARE WITH ₦500 OR LESS. DAY 3

DAY 3:PAN COOKED SCRAMBLED EGG RICE (CHINESE STYLE)


This is the third day of our budget friendly, easy to make series, and so far, for day one, we did Low key mix sauced spaghetti. For day two, we prepared a veggies and noodles stir fry. Now for the day three, we will be making Pan cooked Scrambled Egg rice (chinese style). This recipe is super budget friendly and so delicious.
PREPTIME: 5 minutes. COOK TIME:30 minutes. SERVING: 3 people.

INGREDIENTS

Long or short grain rice 2 cups. ₦120
Eggs 2 large sizes. ₦100
Tomatoes 3 large sizes (chopped). ₦50
Habanero Pepper 4 pieces chopped. ₦50
Onion 1 small size (chopped). ₦20
Seasoning Cubes 2 cubes. ₦20
Vegetable Oil 4 tablespoon. ₦50
Salt half tablespoon.

PREPARATION

1. In a pot, cook the rice for 15 minutes-short grains and 20- long grains with salt and water twice the quantity of rice. After cooking, remove from fire and drain of the water from rice with a sieve.
2. Set a fry pan on fire and pour in the vegetable oil. When the oil get hot add the onions and fry until it turns translucent.
3. Add the chopped tomatoes and pepper, seasoning cubes and fry for 5 minutes while stirring continuously.
4. After five minutes, break in the eggs and fry for one minute.
5. By this time, add the cooked rice and and carefully mix. After mixing, add a pinch of salt let it cook on low heat for 1 minute.
6. After 1 minute remove from heat and serve with dodo.
NOTE: There may be slight difference in cooking time due to disparities in stove heat, temperature, type of pot used and water. So, to avoid burning remember to check it regularly.
