It has been my utmost wish to share this beautiful recipe with you guys. I have tried this recipe countless number of times and I still cant get over it. Not because the in itself is cool but the fact that you can virtually eat it with anything is what makes it cool. I am talking of no other food but PITA BREAD. Pita bread is one of the flatbread kind that has been eaten right from the ancient times but very much available around the world. Places where it is predominantly eaten is Greece, India, Pakistan and lots more other countries. This bread is usually has an hollow space inside (when properly prepared) and this hole can be stuffed with almost any food you wish; from salad, salsa, guacamole down to beans, egg sauce, mention it. Just go on and try out this fail proof recipe and I promise you that you will come back to testify.

PREPTIME: 2 hours COOKTIME: 30 mins. MAKES: 12 pitas.
INGREDIENTS
500g/ 4 cups All purpose flour.
1 full tablespoon of active dry yeast.
1 teaspoon salt.
2 tablespoons of sugar
1 and half tablespoons of olive oil.
350 mls of warm.
Vanilla flavour (optional).
PREPARATION
* In a big bowl, sieve in flour, sugar, salt, yeast and all other dry ingredients. Mix all the dry ingredients together.
* pour in the warm water and oil then mix together to form a dough.
* Knead the dough on a table till it turns semi elastic. After kneading for 8-10 mins, oil up a big bowl with cover. put the dough in the bowl and cover.
* Let it rest and proof for 1 hour to 1: 30 minutes depending on the weather
(proof longer in cool environment and lesser in hot environment ) .
* After allowing the yeast to work it wonder for 1 hour, open the bowl and use your knuckles to deflate the dough.
* Cut the dough into 10 to 12 smaller portions and roll to make it flat and circular. Roll the dough and allow to rest for 10 minutes.
* After 10 minutes, put a large skillet or non stick fry pan on stove top and heat it up (do not put anything inside the pan). Next put the flat dough in the dry and hot pan and watch it rise. By this time, you notice the dough puffing up. That is a good sign and if it is not puffing you not worry. Just make sure to cook both sides for 3-5 minutes.
* Follow the same process to make the rest of the dough.
* When You done you are done. You can go ahead and eat them all or cut it open and stuff it with the salad of your choice.
NOTE: Traditionally, flour, salt, oil, yeast and water are the only ingredients needed to pita bread. But in your own wonderful way, you go ahead and spice it up. flavour and spices like cinnamon, nutmeg, vanilla can be added.
DO NOT BE AFRAID TO EAT YOUR PROTEIN WITH PITA BREAD.
