HOW TO MAKE THE FLUFFIEST PLANTAIN PANCAKES IN 5 SIMPLE STEPS


PREPTIME:10 mins COOKTIME:20 mins SERVE: 3 people.

INGREDIENTS



  • Two ripe plantains.
  • 2 cups/ 250 grams of all purpose flour (sieved).
  • 100 grams/2 tablespoons of melted butter.
  • 1/4 cups/ 50 grams of granulated sugar.
  • 2 large size raw eggs
  • 3 tablespoons/ 2 sachets of powdered milk.
  • 1 levelled tablespoon of ground dried pepper.
  • small portion of diced onions.
  • Half teaspoon of salt.

BEFORE COOKING

1. Pour the sieved flour,salt, sugar, pepper and the powdered milk together in a container.
2.In another bowl, lightly beat the eggs, add the melted butter (it let cool first).
Add the dry ingredients to the liquid ingredients and lightly stir to make a batter.Add the diced onions and half cup of water. Mix lightly with fork.
3. Add the mashed plantain gradually into the batter and stir lightly. You can then add more water if the batter is too thick.

COOKING.

4. place frying pan (preferably a non- stick skillet) on the stove ( or any kitchen heat source) and allow it to get medium hot.
5. Cut in a small size butter ( vegetable oil is a substitute) into the pan and let it melt. pour in a large spoon size of batter in the pan and let cook. You can spread the batter around the pan if you its thick. Turn over the pancake with a spatula or fork when you see bubbles on the pancake or when the edge are becoming dry.
Remove from pan when both sides turns brown. Do the same to the rest.
As you are pan frying each batch, stack them on top each other to keep your pancakes very hot.
SERVE FOR BREAKFAST WITH HOT TEA or COOL FRUIT JUICE.

VARIATION

Other twist can include banana, chocolate, pepper, cheese and many more.
For toppings, you can add Honey, maple syrup or peanut butter.
