How To Add Tofu To Your Simple And Delicious Efo Riro


MAKING EFO RIRO FOR VEGAN AND VEGETARIAN
For vegetarian who want to explore nigerian delicacies
efo riro with tofu also known as awara.


As a Nigerian, I used to think making veganism a thing in Nigeria is far cry. I mean, people diet quite alright; keto, Mediterranean, paleo and others, but staying away from meat, seafood, dairy product and lots more is hard. 
I start to reconsider all these thought when i started exploring the world of veganism (am not saying i am a vegan or vegetarian). The recipes I tried were totally awesome. And amongst this totally awesome vegetarian recipes is the the Efo riro with tofu. This recipe is super easy, fast and low cost (as usual). Oya lets caught to the chase.

INGREDIENTS

4 pieces fresh and ripe tomatoes
6-7 pieces of fresh scotch bonnets peppers.
1 medium sized onion
10 pieces of freshly fried tofu (awara, gbeske).
2 full handful of blanched and sliced efo shoko (Celosia argentea).
2 full tablespoons of Iru (locust beans).
Half cup of red palm oil.
Salt to taste
2 seasoning cubes (optional). Do well not to use any animal or seafood based cubes.

PREPARATIONS
1. Wash and roughly chop the tomatoes, pepper and onions together into a bowl.
2. Put a sized pot on heat and pour the palm oil into it. Allow it to bleach a little before pouring the chopped pepper.
3. Stir continuously after adding the pepper mix. Add the locust beans, some salt and plant based seasoning cubes. stir after adding this and allow it to fry for 2 minutes.
4. Now, add the tofu (awara, gbeske) and stir carefully. fry for another 5 minutes minutes on medium heat. All just about a two tablespoons of water if the sauce is getting dry.

5. After this, remove all the tofu from the efo sauce and stir in the blanched vegetables. Make sure to stir very timidly but intentionally.
6. By this time, add the tofu back into the efo riro, stir together, taste for salt and adjust when necessary. Let it stay on low heat for 3 minutes and remove from heat.
SERVE ALONGSIDE RICE, POUNDED YAM, SEMOVITA E.T.C
